No-Knead No-Time Baguette Recipe | Without Dutch Oven

Course Breakfast


  • 300 grams Bread Flour (All-Purpose Flour works okay as well)
  • 2 tsp Sugar
  • 1 tsp Kosher Salt
  • 2 tsp Instant Yeast
  • 1.5 tbsp Oil
  • 1 cup Water (divided)


  • Combine all dry ingredients and mix thoroughly.
  • Microwave ½ cup of water for 20-25 seconds (depending on how strong your microwave is).
  • Mix microwaved water with the other ½ cup of room temperature water. Your water should be between 110-120 degrees now. Since using Instant Rise Yeast, your water can be up to 130 degrees.
  • NOTE: If you are using Active Dry Yeast, your temperature should be only between 105-115 degrees.
  • Add 1.5 tbsp of Oil to the water and mix.
  • Add water/oil mixture to dry ingredients.
  • Use back of wooden spoon to combine all ingredients until all dry ingredients are combined.
  • Cover and let it rise at room temperature for 60 minutes.
  • After 60 minutes, sprinkle generous amount of flour on dough and use back of wooden spoon to stir and work out air bubbles.
  • Shape dough into final shape – this recipe makes 2 nice size baguettes. Place on baking tray or baguette tray, cover and let it rise for 30-45 minutes.
  • Pre-heat oven to 430 degrees.
  • Cover baguette dough with aluminum foil and bake for 25 minutes.
  • After 25 minutes, remove aluminum foil and bake another 8 minutes.
  • Voila – fresh bread made easy – active cooking time should be only 10 minutes. Have fun!
